Rooted in Sustainability 

A Harmony Between Local & Seasonal

At the core of every dinner and every event, a conscious and delicious effort is made to cook with the planet in mind. Sustainability is more than just my ethos, it is my passion and it is the roots of my inspiration. With my vibrant background in farming, it is my personal mission to translate this into every dish as often as I can. 

When you choose to dine with Savoring the Thyme, not only are you supporting my vision, you are supporting many small local farmers and producers, thus giving them livelihood. Without these incredible and passionate people my job is impossible. I believe that together we can create more resilient & locally rooted food systems.

Know that every menu, every dish and every idea of mine starts with the seasons. Eating and cooking with the seasons is something near and dear to my heart being from New England and is something that I've carried with me here to Madeira. Learning about the produce and the seasons on the Island has been a true joy and new burst of creativity for me and with it I've been able to discover and unlock many new possibilities!
